<p>4 servings</p>

<p>INGREDIENTS<br />5-pound roasting chicken<br />2 lemons, zested and cut into quarters<br />1 ½ teaspoons kosher salt<br />3 tablespoons extra-virgin olive oil<br />3 medium onions, peeled, cut in sixths but left attached at the root end<br />2 sprigs fresh rosemary<br />1 cup dry white wine</p>
<p>INSTRUCTIONS<br />Preheat the oven to 375 degrees. Gently slide your fingers under the skin of the chicken breast to loosen it. Spread the grated lemon zest under the breast skin. Season the chicken with 1 teaspoon of the salt, and rub it all over with 1 tablespoon of the olive oil.</p>
<p>Set the onions and lemon quarters in a roasting pan, and toss with the remaining ½ teaspoon salt and 2 tablespoons olive oil. Stuff some of the lemon quarters in the chicken cavity, along with the rosemary. Set the chicken, breast side up, on the onions and lemons. With a paring knife, cut a small slit in the skin at the tip of the breast. Stick the drumsticks in the opposite sides’ slits, to keep the chicken together and hold its shape while roasting.</p>
<p>Pour the white wine into the pan, and roast the chicken, basting once or twice with the pan juices, until the meat between the thigh and breast reaches 165 on an instant-read thermometer and the skin is crispy and golden, about 1 hour and 20 minutes. Remove the chicken to a cutting board, and let it rest 10 minutes.</p>
<p>Fish out the onions from the pan, and set it in a sauté pan large enough to hold the chicken as well when it is cut into pieces. Strain the pan juices, pushing on the solids to extract all of the sauce, let the juices rest, then skim off any excess fat.</p>
<p>Carve the chicken into serving pieces, and return to the pan with the onions. Add the strained sauce, bring all to a boil, and serve.</p></div>

<p>INGREDIENTS<br />1/2 large white onion cut into pieces<br />6 cloves garlic unpeeled<br />2 pounds (about 7 or 8) roma tomatoes<br />5 whole cloves<br />12 black peppercorns<br />1 1-inch stick ceylon cinnamon or canela<br />1 teaspoon dried oregano<br />1/2 cup vegetable oil<br />1 3-pound chicken cut into serving pieces (wings removed for later use and breasts cut in half)<br />1 teaspoon kosher or coarse sea salt<br />2 cups chicken broth divided<br />1 cup slivered almonds<br />1/2 cup black raisins<br />1/2 cup manzanilla olives stuffed with pimiento sliced<br />1/4 cup capers chopped<br />1/2 cup pickled jalapeño rajas or slices</p>
<p>INSTRUCTIONS<br />Place onion, garlic and tomatoes under the broiler, or on an already heated skillet, griddle or comal set over medium heat. Roast or char for about 10 minutes, flipping in between, until ingredients are completely charred, cooked and mushy. Set aside and peel the garlic cloves when cool enough to handle.</p>
<p>In a small skillet set over medium heat, toast the cloves, peppercorns and cinnamon stick for a couple minutes, moving and flipping them around to toast evenly. Set aside. Toast the oregano for 10 to 15 seconds and remove from the heat.</p>
<p>In the jar of a blender, place the charred onion, peeled garlic and charred tomatoes, along with the tops from the whole cloves (discard the stems), the peppercorns, cinnamon and oregano. Puree until completely smooth.</p>
<p>Heat the oil in a large casserole set over medium-high heat until very hot, but not smoking. Season the chicken with the salt and brown the chicken pieces for 2 to 3 minutes per side. You may need to do this in batches in order to not to crowd the casserole. Once you have removed all the chicken, immediately pour the tomato sauce into the hot oil and cover, as it will splatter. Reduce heat to medium.</p>
<p>Add a cup of chicken broth to the blender and puree for a few seconds to get all the remaining thick sauce out of the blender, pour into the simmering sauce and cover again. Cook for 10 minutes, stirring occasionally. Incorporate the remaining cup of chicken broth, almonds, raisins, olives and capers. Add the browned chicken pieces, cover and reduce heat to low and cook for 20 more minutes.</p>
<p>Remove the lid and add the pickled jalapeño slices. Increase heat to medium and cook for another 10 minutes, allowing all the flavors to blend and the sauce to thicken. Serve with rice.</p></div>

<p>INSTRUCTIONS<br />Season the chicken with salt and cayenne. Smash the whole garlic cloves with the flat side of a knife. Rub onto the chicken, then discard the garlic. In a large, heavy pot over medium heat, add the oil. When the oil is hot, add the chicken in 2 batches and cook until browned, 8 minutes per batch, adding more oil as needed; set aside.</p>
<p>In the same pot, add the onion, bell pepper, minced garlic, and bay leaves. Cook over medium heat, stirring occasionally, until the onions are golden brown, about 8–10 minutes. Add the rice and andouille; cook, stirring frequently, until lightly browned, 15–20 minutes. Return the chicken to the pot, add the stock, and bring to a simmer. Reduce the heat to low, cover, and cook until stock is absorbed, about 30 minutes.</p>
<p>Fluff rice with a fork and season with salt. Just before serving, stir in the scallions and parsley.</p></div>

<p>INGREDIENTS<br />1 chicken (approximately 3 lb preferably organic)<br />1 unwaxed lemon (cut in half)<br />4 sprigs fresh rosemary<br />3 leeks (washed and trimmed)<br />2 red bell peppers<br />1 orange bell pepper<br />1 yellow bell pepper<br />⅔ cup pitted dry-packed black olives<br />¼ cup olive oil<br />kosher salt (to taste)<br />black pepper (to taste)</p>
<p>INSTRUCTIONS<br />Preheat the oven to 200°C/180°C Fan/gas mark 6/400ºF. Untruss the chicken, sit it in a roasting tin and put the lemon halves and 2 of the rosemary sprigs into the chicken’s cavity.</p>
<p>Cut each leek into 3 logs, then slice lengthways and add to the tin. Now, remove the core and seeds of the peppers and slice them into strips, following their natural curves and ridges, and add these to the tin. Tumble in the olives, and now pour the olive oil, mostly over the vegetables but a little over the chicken, too. Add the remaining rosemary sprigs to the vegetables, along with some sea salt flakes and freshly ground pepper, to taste, and, using a couple of spoons or spatulas, gently toss the vegetables about to help coat them with the oil and make sure everything’s well mixed up.</p>
<p>Sprinkle some sea salt flakes over the chicken and put it in the oven for about 1–1¼ hours, by which time the chicken should be cooked through, and its juices running clear when you cut into the flesh with a small sharp knife at the thickest part of the thigh joint. The vegetables should be tender by now, too, and some of the leeks will be a scorched light-brown in parts.</p>
<p>Remove the chicken to a carving board and, while it rests (for about 10 minutes), pop the pan of veg back in the oven, switching the oven off as you do so.</p>
<p>Cut the chicken up chunkily, transferring the pieces to a large warmed platter. Now take the pan back out of the oven and, with a slotted spoon or spatula, remove the vegetables to the large platter and when all is arranged to your aesthetic delight, pour over it all the bronze, highly flavoured juices that have collected in the pan.</p></div>

<p>INGREDIENTS<br />2 teaspoons fresh thyme leaves<br />1 teaspoon whole fennel seeds<br />Kosher salt and freshly ground black pepper<br />1/3 cup good olive oil<br />1 lemon, halved and sliced 1/4-inch thick<br />1 yellow onion, halved and sliced 1/4-inch thick<br />2 large garlic cloves, thinly sliced<br />1 (4-pound) chicken, backbone removed and butterflied<br />1/2 cup dry white wine, such as Pinot Grigio<br />1 fresh rosemary sprig<br />Juice of 1 lemon</p>
<p>INSTRUCTIONS<br />Preheat the oven to 450 degrees F.</p>
<p>Place the thyme, fennel seeds, 1 tablespoon salt, and 1 teaspoon pepper in a mini food processor and process until ground. Pour the olive oil into a small glass measuring cup, stir in the herb mixture, and set aside.</p>
<p>Distribute the lemon slices in a 12-inch cast-iron skillet and distribute the onion and garlic on top.</p>
<p>Place the chicken, skin side down, on top of the onion and brush with about half the oil and herb mixture. Turn the chicken skin side up, pat it dry with paper towels (very important!), and brush it all over with the rest of the oil and herb mixture.</p>
<p>Roast the chicken for 30 minutes. Pour the wine into the pan (not on the chicken!) and roast for another 10 to 15 minutes, until a meat thermometer inserted into the thickest part of the breast registers 155 to 160 degrees.</p>
<p>Remove the chicken from the oven, sprinkle it with the lemon juice and the leaves of 1 rosemary sprig, cover the skillet tightly with aluminum foil, and allow to rest for 10 to 15 minutes. Cut the chicken into quarters, and serve hot with the pan juices, cooked lemon, and onion.</p></div>

<p>INGREDIENTS<br />11 tablespoons vegetable oil divided<br />11 tablespoons flour<br />1 medium onion diced<br />2 ribs celery diced<br />1 large green pepper diced<br />3 cloves garlic minced<br />1 pound boneless skinless chicken thighs<br />¾ pound large shrimp deveined and shells/tails removed<br />¾ pound Andouille sausage sliced<br />5 cups low sodium chicken stock plus more if too thick<br />¼ cup flat leaf parsley minced<br />2 large bay leaves<br />1 teaspoon filé powder for serving, optional<br />1 tablespoon Cajun seasoning divided, plus more to taste<br />salt and pepper to taste<br />5 green onions sliced</p>
<p>INSTRUCTIONS<br />Heat a large Dutch oven or heavy pot to a touch less than medium. Add 9 tablespoons of vegetable oil. Slowly whisk the flour into the oil and cook, stirring frequently, until the roux reaches a dark brown color (about 40-45 minutes). Make sure to watch the roux the whole time and stir frequently to avoid burning.</p>
<p>Meanwhile, heat a large pan to medium heat. Pat the chicken thighs dry then season with a ½ tablespoon of Cajun seasoning on all sides.</p>
<p>Add the remaining 2 tablespoons of vegetable oil to the pan and add the chicken thighs. Sear for 4-5 minutes per side or until well browned. Remove the thighs to a cutting board and when cool enough to handle chop into bite-size pieces.</p>
<p>Add the Andouille sausage to the same pan and sear until browned (about 4-5 minutes total) then set aside on a plate. Add the low-sodium chicken stock to the pan and with a wooden spoon scrape up all of the brown bits. Turn the heat down to low.</p>
<p>Once the roux is dark brown, add the onions, pepper, and celery and cook in the roux until soft (about 7-10 minutes). Add the garlic and cook for another 2-3 minutes or until fragrant.</p>
<p>Add the chopped chicken, Andouille sausage, chicken stock, bay leaves, and remaining Cajun seasoning to the pot and bring to a boil. Scrape up any brown bits with a wooden spoon. Once boiling turn the heat down and simmer uncovered for 45 minutes.</p>
<p>After 45 minutes stir in the shrimp along with the parsley. Cook for 3-4 minutes or until the shrimp are fully cooked then remove the pot from the heat.</p>
<p>Taste test and adjust salt and pepper and Cajun seasoning to taste if required. Serve the gumbo with white rice, a sprinkle of green onion and parsley, and filé powder.</p></div>

<p>INGREDIENTS<br />3 ½ pounds chicken thighs or a combination of legs and thighs / use whole chicken<br />4 tablespoons butter divided<br />2 tablespoons olive oil<br />1 medium onion diced<br />2 medium carrots diced<br />2 celery ribs diced<br />12 ounces cremini mushrooms quartered<br />3 cloves garlic minced<br />¼ cup flour<br />3 cups low sodium chicken stock<br />1 cup dry white wine<br />3 tablespoons Italian flat leaf parsley minced<br />4 sprigs thyme<br />4 sprigs parsley<br />1 large bay leaf<br />salt and pepper to taste<br />½ cup heavy cream<br />2 large egg yolks at room temperature</p>
<p>INSTRUCTIONS<br />Heat a large Dutch oven or heavy pan to a touch less than medium heat. Pat the chicken very dry with paper towels and season very well with salt and pepper on both sides. Add the olive oil and begin searing the chicken skin side down. After 2 minutes, add 2 tablespoons of butter to the pan. Sear chicken for 5 minutes then flip and cook for another 3 minutes. Do not overcrowd the pot. Work in batches and place seared chicken onto a plate.</p>
<p>Add the remaining butter and the onions, celery, and carrots to the pan. Cook until soft (about 8-10 minutes) then add the mushrooms. Continue cooking until they release their liquid (about 5 minutes). Season the veggies with a touch of salt. Add the garlic and cook until fragrant (about 1 minute) then add the flour and cook for 1 more minute stirring frequently to thoroughly incorporate.</p>
<p>Add the wine and chicken stock to the pot. Turn heat to high and with a wooden spoon dislodge all of the flavor bits from the bottom of the pot. Cook for 1 minute then turn the heat down to medium-high.</p>
<p>Next, add the chicken and juices to the pot skin side up along with the parsley sprigs, thyme sprigs, and bay leaf. Cook for 5 minutes or until bubbling aggressively.</p>
<p>Turn heat down to medium-low and cover partially with a lid. Cook for approximately 30-35 more minutes or until the chicken thighs reach at least a 175f internal temperature.</p>
<p>Once the chicken is fully cooked, move it to a plate and finish the sauce. Turn heat to high and reduce the liquid in the pot by about half. This will take about 5 minutes. At this time remove the herb sprigs and bay leaf.</p>
<p>Whisk the egg yolks and heavy cream together in a bowl. Add 1 tablespoon of the hot cooking liquid while whisking. Continue to add the liquid 1-2 tablespoons at a time until you have added at least ½ a cup of the hot liquid. Pour the tempered mixture back into the pot and stir well.</p>
<p>Add the minced parsley into the sauce and stir to combine. Taste test the sauce and season with salt and pepper to taste. For a touch more acid, add lemon juice to your liking, but the wine is normally sufficient. Return the chicken to the pot and cook for 3-5 minutes or until the chicken is hot. Serve with crusty bread.</p></div>

<p>INSTRUCTIONS<br />Preheat oven to 375f and set the rack to the middle level.</p>
<p>Heat a large oven-safe pan to medium heat. Pat the chicken very dry with paper towels and season with oregano, salt, and pepper on all sides. Place 2 tablespoons of olive oil into the pan and sear the chicken skin side down for 6 minutes, then flip and cook for 3 more minutes. Place cooked chicken on a plate and set aside. Work in batches and do not crowd the pan while searing.</p>
<p>When finished cooking the chicken, turn the heat to medium-low and add the remaining olive oil and peppers. Cook for 5 minutes or until soft, then add in the garlic and cook for a few more minutes or until golden.</p>
<p>Taste test the peppers. If they aren&#8217;t too spicy add red pepper flakes to taste. Otherwise, omit the red pepper flakes and move on to the next step.</p>
<p>Next, add the tomato paste and cook for about 5 more minutes stirring frequently. Then, add the wine and turn the heat to medium-high. Using a wooden spoon scrape the bottom to dislodge all of the brown bits. After 2 minutes add the plum tomatoes and the lemon juice and stir together. Bring the sauce to a simmer and cook for 5 minutes to reduce some of the liquid from the tomatoes.</p>
<p>Place the chicken thighs into the pan skin side up and bake in the oven until cooked through. It should take about 30 minutes for the chicken thighs to reach 175f. Use a meat thermometer to make sure they are at least 175f.</p>
<p>Remove the chicken once fully cooked and taste the sauce. Adjust salt and pepper to taste and mix in the parsley. Serve with grated cheese and crusty bread to mop up all of the sauce.</p>
<p>Notes:<br />Chicken thighs should be cooked to at least 175f due to dark meat having more connective tissue that needs to break down. The exact cooking time will vary, so use an instant-read thermometer for precision.</p>
<p>Long hots are sometimes very spicy but occasionally have almost zero heat. For this reason, adjust hot red pepper flakes to taste.</p>
<p>Leftovers can be saved for up to 3 days in the fridge or 3 months in the freezer. Reheat in the oven at 350f until warmed through.</p></div>

<p>INSTRUCTIONS<br />Preheat the oven to 450°F. Rinse the chicken, then dry it very well with paper towels, inside and out. The less it steams, the drier the heat, the better.</p>
<p>Salt and pepper the cavity, then truss the bird. Trussing is not difficult, and if you roast chicken often, it’s a good technique to feel comfortable with. When you truss a bird, the wings and legs stay close to the body; the ends of the drumsticks cover the top of the breast and keep it from drying out. Trussing helps the chicken to cook evenly, and it also makes for a more beautiful roasted bird.</p>
<p>Now, salt the chicken—I like to rain the salt over the bird so that it has a nice uniform coating that will result in a crisp, salty, flavorful skin (about 1 Tbsp.). When it’s cooked, you should still be able to make out the salt baked onto the crisp skin. Season to taste with pepper.</p>
<p>Place the chicken breast side up in a sauté pan or roasting pan and, when the oven is up to temperature, put the chicken in the oven. I leave it alone—I don’t baste it, I don’t add butter; you can if you wish, but I feel this creates steam, which I don’t want. Roast it until it’s done, 50 to 60 minutes. Remove it from the oven and add the thyme, if using, to the pan. Baste the chicken with the pan juices and thyme and let it rest for 15 minutes on a cutting board.</p>
<p>Remove the twine. Separate the middle wing joint and eat that immediately. Remove the legs and thighs. I like to take off the backbone and eat one of the oysters, the two succulent morsels of meat embedded here, and give the other to the person I’m cooking with. But I take the chicken butt for myself. I could never understand why my brothers always fought over that triangular tip—until one day I got the crispy, juicy fat myself. These are the cook’s rewards. Cut the breast down the middle and serve it on the bone, with one wing joint still attached to each. The preparation is not meant to be super elegant. Slather the meat with fresh butter. Serve with mustard on the side and, if you wish, a simple green salad. You’ll start using a knife and fork, but finish with your fingers, because it’s so good.</p></div>
