				<div class="et_pb_text_inner"><p>There are a few cool tricks to this Enchiladas Con Carne recipe, one of which Sam Sifton picked up from an old issue of Bon Appétit, one he learned from Robb Walsh, the great Tex-Mex scholar and restaurateur who runs El Real Tex-Mex in Houston, and a final one Sifton learned by happenstance. First, for the thickening agent in the chile sauce, toast raw all-purpose flour in a pan until it is nutty and golden brown, then reserve it to stir in with the browned beef later in the recipe. Second, if you like truly melty cheese in the classic Tex-Mex tradition, use a mixture of American cheese, like Velveeta, with the Cheddar you use inside and on top of the finished enchiladas.</p>

<p>Serves 4-6</p>
<p>INGREDIENTS<br />FOR THE CHILI CON CARNE<br />½ cup all-purpose flour<br />2 tablespoons neutral oil, like canola<br />1 pound ground chuck beef, ideally 20 percent fat<br />Kosher salt and ground black pepper, to taste<br />1 medium white onion, peeled and chopped<br />2 cloves garlic, peeled and minced<br />1 jalapeño pepper or more to taste, seeds removed if you want it less spicy, stemmed and chopped<br />1 cup chopped or canned crushed tomatoes<br />3 tablespoons chile powder<br />½ teaspoon ground cumin<br />½ teaspoon dried oregano, ideally Mexican<br />2 cups chicken stock, ideally homemade or low-sodium if store-bought</p>
<p>FOR THE ENCHILADAS<br />½ cup neutral oil, like canola<br />12 yellow corn tortillas<br />3 cups shredded Cheddar cheese, or a mixture of 1½ cups Cheddar cheese and 1½ cups American cheese, like Velveeta<br />1 medium-size white onion, peeled and chopped (optional)</p>
<p>INSTRUCTIONS<br />Prepare the chili con carne: Put flour in a large sauté pan set over medium-high heat. Cook, stirring frequently, until it begins to turn golden brown and smell nutty, then pour it onto a plate to cool.</p>
<p>Wipe out sauté pan and return it to high heat with 2 tablespoons oil. When oil is hot and shimmery, add ground beef to pan, and cook, breaking it up with a fork and stirring, until it is well browned, about 12 to 15 minutes. Season with salt and pepper, then use a slotted spoon to remove meat to a bowl, leaving drippings behind.</p>
<p>Add onion, garlic and jalapeño to pan and cook, stirring to scrape up any browned bits of meat, for 10 to 12 minutes, or until vegetables are soft. Stir in tomatoes and cook until their liquid has evaporated, then add chile powder, cumin and oregano and stir to combine. After a minute or so, when mixture begins to turn fragrant, return browned meat to pan, along with toasted flour, and stir well to combine.</p>
<p>Lower heat to medium-high and slowly stir in chicken stock, ½ cup at a time, until mixture has thickened and started to simmer. Lower heat again and allow chili to cook slowly for 45 minutes to 1 hour, until meat is tender. Add more stock or water if needed. Use immediately, or let cool, cover and refrigerate for up to a few days.</p>
<p>When you are ready to cook the enchiladas, heat oven to 425 degrees. In a medium sauté pan set over medium-high heat, heat ½ cup neutral oil until it begins to shimmer. Using tongs or a wide spatula, place a tortilla in the hot fat; it should start to bubble immediately. Heat tortilla for about 10 seconds a side, until soft and lightly browned. Remove tortilla and set on a rack set over a baking pan, or just on a baking pan if you don’t have a rack. Repeat with remaining tortillas, working quickly.</p>
<p>Assemble the enchiladas: Using a ladle, put about ½ cup chili in the bottom of a 9-by-13-inch baking pan and spread it out a little. Roll a few tablespoons of cheese into each tortilla, along with a tablespoon or so of chili, then place it seam-side down in the pan, nestling each one against the last. Ladle remaining chili over top of rolled tortillas and sprinkle with remaining cheese.</p>
<p>Transfer to oven and bake until sauce bubbles and cheese is melted, about 10 to 15 minutes. Sprinkle chopped onions over the top, if using, and serve immediately.</p></div>

<p>For The Onion Sauce:<br />1 small onion finely chopped<br />2 cloves garlic roughly chopped<br />1 tbsp all purpose flour <br />1/2 cup dry white wine <br />1/2 tsp dried thyme <br />1 1/2 cups vegetable broth <br />sea salt &amp; black pepper</p>
<p>Extras:<br />1/4 cup extra virgin olive oil<br />handful chopped fresh parsley</p>
<p>INSTRUCTIONS</p>
<p>Drain the can of white beans into a colander and rinse under water, then shake off any excess water and transfer into a large bowl, using a potato masher or a large fork, mash down on the white beans until well mashed</p>
<p>Once the white beans are mashed, add in the bread crumbs, crack in the egg, add in the chopped onion, chopped garlic, chopped parsley, ground cumin and season with sea salt &amp; black pepper, mix together until well mixed, then push down on the mixture to end up with a paste-like texture</p>
<p>To shape the meatballs, grab a spoonful of the mixture and squeeze it in your hands, this is to ensure the ingredients are well binded together, the form it into a shape of a golf ball</p>
<p>Heat a large fry pan with a medium heat and add in the olive oil</p>
<p>After a couple of minutes add in the white bean meatballs, all in a single layer, cook for 8 to 10 minutes or until golden fried all around, then remove from the pan and set aside</p>
<p>Using the same pan with the same heat, add in the chopped onion and garlic, mix continuously, after 3 to 4 minutes and the onion is translucent, add in the flour, continue to mix together, after 2 minutes add in the wine, dried thyme and season with sea salt &amp; black pepper, mix together and then simmer</p>
<p>After 3 minutes and the alcohol has cooked off, add in the vegetable broth, continue to mix and go for 3 to 4 minutes or until you end up with a slightly creamy sauce, then add the white bean meatballs back into the pan, all in a single layer, heat them through for 2 to 3 minutes, then remove from the heat</p>
<p>Transfer the white bean meatballs into serving dishes, top off with the onion sauce and some chopped fresh parsley</p></div>

<p>INSTRUCTIONS<br />Drain the canned chickpeas into a colander and rinse under water, cut the potatoes (peeled) into small bite-size pieces, finely chop the onion, roughly chop 4 cloves of garlic, finely chop the green bell pepper, roughly chop the carrot (peeled) and finely grate the tomatoes</p>
<p>Heat a stock pot with a medium heat and add in the olive oil</p>
<p>After a couple of minutes add in the blanched almonds and four whole cloves of garlic (skins removed), mix continuously, after 3 to 4 minutes and the ingredients are lightly sauteed, transfer them into a mortar and set aside</p>
<p>Using the same pan with the same heat, add in the chopped onion, garlic, green bell pepper and carrot, mix continuously, after 3 to 4 minutes and the vegetables are lightly sauteed, add in the sherry vinegar, paprika and cumin, quickly mix together, then add in the grated tomato and season with sea salt &amp; black pepper, mix together and then simmer without mixing</p>
<p>Once the grated tomato has slightly thickened, about 3 minutes, add in the chopped potatoes, drained chickpeas and vegetable broth, then add in the bay leaf, turn it up to a high heat and give it a gentle mix</p>
<p>When it comes to a boil, place a lid on the stock pot and lower to a low-mediun heat</p>
<p>In the meantime, add in 2 tbsp (8 grams) chopped fresh parsley into the mortar with the almonds &amp; garlic, along with a kiss of sea salt, using a pestle, pound down on the ingredients until you form a paste-like texture</p>
<p>After simmering the stew for 15 to 20 minutes and the potatoes are just cooked through (you can always pierce them with a toothpick to ensure they&#8217;re done), add in the almond and garlic mixture, mix together until well mixed, then remove from the heat</p>
<p>Transfer into shallow bowls and garnish with fresh parsley</p></div>

<p>Once the tomato sauce has slightly thickened, about 3 minutes, add the chickpea meatballs back into the pan, give each one a gentle flip so they´re fully coated in the sauce, simmer for 3 to 4 minutes</p>

<p>Once the grated tomato has slightly thickened, about 3 minutes, add in the canned butter beans (drained &amp; rinsed), the vegetable broth and the bay leaf, rasie to a high heat, when it comes to a boil place a lid on the pan and lower to a low-medium heat</p>
<p>Meanwhile, drain the cans of tuna into a sieve with a bowl underneath and gently shake the sieve to remove any excess oil</p>
<p>After simmering the beans for 10 minutes, remove from the heat, add in the drained tuna and gently mix together</p>
<p>Transfer into shallow bowls and sprinkle with finely chopped parsley</p></div>

<p>INGREDIENTS<br />2 tablespoons unsalted butter<br />6 tablespoons extra-virgin olive oil, divided<br />2 medium shallots, halved and thinly sliced (about 2/3 cup)<br />4 medium garlic cloves, thinly sliced (about 1 tablespoon)<br />1 medium jalapeño chile, stemmed, seeded, and finely chopped<br />2 teaspoons cumin seeds<br />3/4 teaspoon kosher salt, divided<br />1/2 teaspoon black pepper, divided<br />1/2 cup dry white wine<br />1 1/2 cups vegetable broth<br />1 (14-ounce) can cannellini beans (undrained)<br />1 (14-ounce) can cranberry beans (see Note), drained but not rinsed<br />2 1/2 cups lightly packed fresh spinach<br />2 tablespoons fresh lemon juice, plus grated lemon zest for serving<br />1 tablespoon fresh lime juice, plus grated lime zest for serving<br />4 (1-inch-thick) rustic bread slices<br />Shredded Parmesan cheese<br />Chopped fresh chives</p>
<p>INSTRUCTIONS<br />Heat butter and 2 tablespoons olive oil in a medium saucepan over medium until butter is melted. Add shallots, garlic, jalapeño, and cumin seeds; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook, stirring occasionally, until shallots are softened and cumin is fragrant, about 5 minutes. Add wine; cook, stirring often, until nearly evaporated, about 3 minutes. Add broth, and bring to a simmer over medium-high.</p>
<p>Stir cannellini beans and their liquid and drained cranberry beans into broth in saucepan. Bring to a simmer over medium, and cook, gently stirring occasionally, until hot, about 5 minutes. Add spinach, and cook, stirring often, until wilted, about 2 minutes. Stir in lemon juice and lime juice; sprinkle with remaining 1/2 teaspoon salt and remaining 1/4 teaspoon black pepper.</p>
<p>Heat 2 tablespoons olive oil in a large skillet over medium-high. Add 2 bread slices; cook, turning once or twice, until nicely toasted on both sides, 3 to 5 minutes. Place 1 slice in each of 2 bowls. Repeat process with remaining 2 tablespoons olive oil and remaining 2 bread slices. Spoon saucy beans evenly over bread slices. Sprinkle with shredded Parmesan, chives, lemon zest, and lime zest. Serve immediately.</p></div>

<p>INGREDIENTS<br />8 cups Scrappy Vegetable Broth or store-bought low-sodium vegetable broth<br />1 heaping cup (7 ounces) brown/green lentils, rinsed and picked over<br />1/4 cup olive oil<br />2 medium-large onions (9 ounces each), thinly sliced<br />4 cloves garlic, thinly sliced<br />1 teaspoon cumin seeds<br />1 teaspoon ground coriander<br />2 cups lightly packed fresh cilantro leaves and stems (1 large bunch), finely chopped and divided<br />4 ounces dried tagliatelle or fettuccine, broken into bite-size pieces<br />1 teaspoon fine salt, plus more to taste<br />1/2 teaspoon freshly ground black pepper, plus more to taste<br />2 tablespoons fresh lemon juice, plus more to taste</p>
<p>INSTRUCTIONS<br />In a large saucepan over medium-high heat, combine the broth and the lentils and bring to a boil. Reduce the heat until the liquid is at a simmer, and cook until the lentils are very tender, about 35 minutes.</p>
<p>While the lentils are cooking, in a large skillet over medium heat, heat the oil until it shimmers. Add the onions and garlic and cook, stirring occasionally, until they are soft and just beginning to take on color, 10 to 15 minutes. Stir in the cumin seeds and ground coriander and stir-fry until fragrant, about 1 minute. Stir in half the chopped cilantro and cook, stirring, until completely wilted, about 1 minute. Remove from the heat.</p>
<p>When the lentils are tender, add in the onion mixture. Add the tagliatelle pieces, salt and pepper, and stir to combine. Increase the heat to return to a boil, then reduce the heat so the liquid is simmering, and cook until the tagliatelle is just tender, about 10 minutes. Stir in the lemon juice and the remaining chopped cilantro. Taste, and season with more salt, pepper and/or lemon juice as needed.</p>
<p>Serve hot.</p></div>

<p>INGREDIENTS<br />2 tbsp olive oil<br />1 medium onion, chopped<br />3 carrots, chopped<br />2 celery ribs, chopped<br />3 garlic cloves, chopped<br />1 tsp ground ginger<br />1 tsp sea salt<br />½ tsp ground turmeric<br />½ tsp ground cumin<br />½ tsp ground cinnamon<br />4 to 5 cups water<br />15-ounce can tomatoes, diced<br />½ cup dried green lentils<br />15-ounce can chickpeas, drained<br />2 (15-ounce) cans butter or cannellini beans or Fava beans<br />Fresh cilantro or parsley to garnish</p>
<p>INSTRUCTIONS<br />Heat oil in a large saucepan or medium-sized Dutch oven. Sauté the onion, carrots, and celery until tender. Stir in the garlic and cook for another minute.</p>
<p>Add turmeric, cumin, cinnamon, and ginger; stir and cook for a few seconds or until fragrant. Then stir the water, tomatoes, dry lentils, chickpeas, and fava beans (or bean of choice). Season with salt and pepper and bring to a simmer. Continue to cook for about 20 minutes, or until the lentils are cooked through. Add additional water if necessary.</p>
<p>To make it a heartier meal, serve with poached eggs on top or with added cooked chicken, beef, or lamb. Top with fresh cilantro or parsley.</p></div>
