The mountain of shredded sprouts may seem like a lot, but like spinach, it will cook down. As the sprouts soften, they caramelize and naturally sweeten, losing any hints of bitterness. Chickpeas are toasted in olive oil until deep golden brown, crispy in spots and super toasty. They bring a nutty, earthy flavor to the dish, complementing the tangy capers and lemony sauce. Leftovers are tasty enjoyed cold like pasta salad, added to a frittata, or sautéed in olive oil until golden and topped with a fried egg.</p>

<p>INGREDIENTS<br />Kosher salt and black pepper<br />6 tablespoons extra-virgin olive oil<br />1 (15-ounce) can chickpeas, rinsed and patted dry<br />2 tablespoons unsalted butter<br />3 garlic cloves, thinly sliced<br />1 pound brussels sprouts, trimmed and very thinly sliced (about 5 tightly packed cups)<br />8 ounces dried tagliatelle pasta<br />½ cup freshly grated Parmesan (about 1½ ounces), plus more for serving<br />2 tablespoons drained capers<br />2 tablespoons lemon juice<br />½ teaspoon red-pepper flakes<br />¼ cup chopped fresh chives</p>
<p>INSTRUCTIONS<br />Bring a pot of salted water to a boil.</p>
<p>Meanwhile, in a Dutch oven or a large, deep skillet, heat 2 tablespoons of the oil over medium. Add chickpeas, season with salt and pepper and cook, stirring occasionally, until deep golden and well toasted, about 5 minutes. Transfer the chickpeas to a paper towel-lined plate.</p>
<p>Add the butter, garlic and 2 tablespoons of the oil to the Dutch oven and cook, stirring, until fragrant, about 1 minute. Add brussels sprouts, season with salt and pepper, and cook, stirring occasionally, until tender and lightly caramelized, about 10 minutes.</p>
<p>Meanwhile, cook pasta according to package directions in the boiling water until al dente. Drain, reserving 2 cups of the pasta water.</p>
<p>Add the pasta, 1 cup reserved pasta water, about ¾ of the toasted chickpeas and the remaining 2 tablespoons oil to the Dutch oven. Stir in the Parmesan, capers, lemon juice, red-pepper flakes and half the chives until well incorporated and saucy, 1 to 2 minutes. Season with salt and pepper. Add more pasta water if a thinner sauce is desired.</p>
<p>Divide pasta among bowls. Top with remaining toasted chickpeas and chives. Garnish with more black pepper and Parmesan.</p></div>

<p>INGREDIENTS<br />8 slices multi grain sandwich bread or any rustic bread from Mountain Oven<br />1 jar/can chickpeas 25 oz<br />1 container low fat plain Greek yogurt or your favorite mayo 5.3 oz<br />1 tbsp dijon mustard<br />1 small red onion finely chopped<br />1 clove garlic finely grated<br />2 tbsp chopped fresh parsley<br />1 tbsp lemon juice<br />1 tomato thinly sliced<br />handful chopped up lettuce/greens<br />sea salt &amp; black pepper</p>
<p>INSTRUCTIONS<br />Drain the chickpeas into a colander and rinse under water, then shake off any excess water, transfer the chickpeas into a large bowl and using a potato masher or large fork, mash down on the chickpeas until they&#8217;re semi-mashed, meaning it&#8217;s ok if you have little chunks of chickpeas</p>
<p>Add the Greek yogurt over the mashed chickpeas, along with the dijon mustard, red onion, garlic, parsley, lemon juice and season with sea salt &amp; black pepper, mix together until well mixed, add in more yogurt if your mixture is too dry</p>
<p>Lightly toast the slices of sandwich bread</p>
<p>Add the chickpea salad over the slices of toast, top off with slices of tomato, greens/lettuce and another slice of toast</p></div>

<p>INGREDIENTS<br />3 tbsp extra virgin olive oil<br />20 blanched almonds<br />8 cloves garlic<br />1 small onion<br />1 green bell pepper<br />1 carrot<br />1 tbsp sherry vinegar<br />1 tsp sweet smoked Spanish paprika<br />1/2 tsp ground cumin<br />2 tomatoes<br />2 potatoes<br />2 cans chickpeas 15.5 oz each<br />3 cups vegetable broth<br />1 bay leaf<br />handful fresh parsley<br />sea salt &amp; black pepper</p>
<p>INSTRUCTIONS<br />Drain the canned chickpeas into a colander and rinse under water, cut the potatoes (peeled) into small bite-size pieces, finely chop the onion, roughly chop 4 cloves of garlic, finely chop the green bell pepper, roughly chop the carrot (peeled) and finely grate the tomatoes</p>
<p>Heat a stock pot with a medium heat and add in the olive oil</p>
<p>After a couple of minutes add in the blanched almonds and four whole cloves of garlic (skins removed), mix continuously, after 3 to 4 minutes and the ingredients are lightly sauteed, transfer them into a mortar and set aside</p>
<p>Using the same pan with the same heat, add in the chopped onion, garlic, green bell pepper and carrot, mix continuously, after 3 to 4 minutes and the vegetables are lightly sauteed, add in the sherry vinegar, paprika and cumin, quickly mix together, then add in the grated tomato and season with sea salt &amp; black pepper, mix together and then simmer without mixing</p>
<p>Once the grated tomato has slightly thickened, about 3 minutes, add in the chopped potatoes, drained chickpeas and vegetable broth, then add in the bay leaf, turn it up to a high heat and give it a gentle mix</p>
<p>When it comes to a boil, place a lid on the stock pot and lower to a low-mediun heat</p>
<p>In the meantime, add in 2 tbsp (8 grams) chopped fresh parsley into the mortar with the almonds &amp; garlic, along with a kiss of sea salt, using a pestle, pound down on the ingredients until you form a paste-like texture</p>
<p>After simmering the stew for 15 to 20 minutes and the potatoes are just cooked through (you can always pierce them with a toothpick to ensure they&#8217;re done), add in the almond and garlic mixture, mix together until well mixed, then remove from the heat</p>
<p>Transfer into shallow bowls and garnish with fresh parsley</p></div>

<p>INSTRUCTIONS<br />Drain the canned chickpeas into a colander and rinse under water, then shake off any excess water and transfer the chickpeas into a large bowl, using a potato masher or a large fork, mash down on the chickpeas until well mashed</p>
<p>Once the chickpeas are mashed, add in the bread crumbs, crack in the egg and add in the chopped onion, then finely grate the garlic over the ingredients, finely grate the carrot (peeled), add in the cumin, parsley and season with sea salt &amp; black pepper, mix together until well mixed, then push down on the mixture to end up with a paste-like texture</p>
<p>To shape the meatballs, grab a spoonful of the mixture and squeeze it in your hands, this is to ensure the ingredients and well binded together, the form it into a shape of a golf ball</p>
<p>Heat a large fry pan with a medium heat and add in the olive oil</p>
<p>After a couple of minutes add in the chickpea meatballs, all in a single layer, fry for 8 to 10 minutes or until golden fried all around, then remove from the pan and set aside</p>
<p>Using the same pan with the same heat, add in 3 cloves of garlic that have been finely chopped, mix continuously, after 15 seconds add in a generous tsp of sweet smoked Spanish paprika, quickly mix together, then add in the canned tomato sauce and season with sea salt &amp; black pepper, mix together and then simmer without mixing</p>
<p>Once the tomato sauce has slightly thickened, about 3 minutes, add the chickpea meatballs back into the pan, give each one a gentle flip so they´re fully coated in the sauce, simmer for 3 to 4 minutes</p>
<p>Transfer into serving dishes and sprinkle with chopped fresh parsley</p></div>

<p>INGREDIENTS<br />1 (15-ounce) can chickpeas, drained and rinsed<br />1 cup packed fresh basil leaves<br />1 cup unsalted roasted pistachios<br />Juice of 1-2 large lemons (roughly 1/3 cup)<br />½ cup tahini<br />4 cloves garlic, roughly chopped<br />¼ cup finely grated Parmigiano-Reggiano<br />⅓ cup olive oil<br />Salt and freshly ground pepper<br />Olive oil, paprika, chopped pistachio and finely chopped parsley, for topping</p>
<p>INSTRUCTIONS<br />Add chickpeas to a medium saucepan and pour over enough water to cover. Bring to a boil over high heat. Reduce to medium and allow to cook about 20 minutes. Drain, reserving cooking water, and run over cool water to stop the cooking process.</p>
<p>In the bowl of a food processor or high-powered blender, add cooked chickpeas, basil, pistachio, lemon juice, tahini, garlic and parmigiano. Blend on medium speed about 30 seconds to combine. Add 3 tablespoons of chickpea cooking water, olive oil and a pinch of salt and pepper. Blend again, about 2 minutes longer until smooth and creamy. Scrape down the sides of the bowl as you go. If it’s too thick, add a few extra tablespoons of chickpea cooking water. Taste and adjust with lemon juice, salt and pepper if needed.</p>
<p>Scoop hummus into a deep serving bowl. Use a large spoon to create “swoops” or waves, that will act as crevices for toppings. Drizzle with a little olive oil and top with paprika, chopped pistachios and parsley. Serve with warm pita for dipping.</p></div>

<p>Position rack in middle of the oven. Preheat oven to 450 F (230 C). Place a cast iron skillet in oven to heat up.</p>
<p>Carefully remove skillet from oven when hot. Pour ¼ cup (60 ml) olive oil into skillet and swirl to coat the bottom.</p>
<p>Remove and discard any foam that has formed on the top of the batter. Add salt and ground black pepper and whisk batter to combine. Pour batter into skillet.</p>
<p>Working quickly, scatter fried shallots and rosemary on top of batter. Carefully transfer hot cast iron skillet back into oven and bake for 10-15 minutes or until bread is golden brown and set.</p>
<p>Let flatbread cool slightly before slicing.</p></div>

<p>INGREDIENTS<br />2 sweet potatoes<br />15.5 oz can of chickpeas<br />2 tbsp extra virgin olive oil<br />1 tsp sweet smoked Spanish paprika<br />1/2 tsp ground cumin<br />pinch sea salt<br />dash black pepper<br />12 cherry tomatoes<br />handful arugula</p>
<p>For the sauce:<br />15.5 oz can of chickpeas<br />2 cloves garlic<br />1/2 tbsp lemon juice<br />2 tbsp extra virgin olive oil<br />pinch sea salt<br />dash black pepper</p>
<p>INSTRUCTIONS<br />Wash and pat dry the sweet potatoes, then cut each one in half lengthwise, add them cut side down over a baking pan lined with parchment paper, drizzle a kiss of extra virgin olive oil over the sweet potatoes and season with sea salt</p>
<p>Add the sweet potatoes into a preheated oven, bake + broil option (bottom + top heat) 210 C &#8211; 410 F</p>
<p>Meanwhile, drain a can of chickpeas into colander and rinse under water, heat a fry pan with a medium heat and add in the chickpeas, dry roast for 2 to 3 minutes, then add in 1 tbsp (15 ml) extra virgin olive oil, 1 tsp sweet smoked Spanish paprika, 1/2 tsp ground cumin and season with sea salt &amp; black pepper, gently mix together, then turn off the heat</p>
<p>To make the sauce, add another can of chickpeas (drained &amp; rinsed) into a food processor, along with 2 cloves garlic, 1/2 tbsp lemon juice and 2 tbsp extra virgin olive oil, season with sea salt &amp; black pepper, then run the food processor until well mixed, then add in between 1/4 cup to 1/2 cup (60 ml to 120 ml) cold water while running the food processor, once you end up with a creamy sauce set aside</p>
<p>Once the sweet potatoes are roasted, between 30 to 40 minutes (you can always pierce them with a toothpick to ensure they are cooked through), remove them from the oven and let them cool for a couple minutes</p>
<p>To assemble the dish, add one of the sweet potatoes cut side up over a dish, using a fork gently mash the inside of the sweet potato, then add some of the seasoned chickpeas over the sweet potato, decorate a couple of cherry tomatoes cut in half around the sweet potato, top off with the sauce and some chopped arugula</p></div>

<p>Serves 10-12</p>

<p>INGREDIENTS<br />For the poundcake:<br />1 cup (2 sticks) unsalted butter plus more for greasing the pan<br />1 cup granulated sugar<br />1/2 teaspoon ground canela or true cinnamon<br />6 eggs separated into yolks and whites<br />1 cup cooked chickpeas rinsed and pureed*<br />1/2 cup all-purpose flour plus more to flour cake pan<br />2 teaspoons baking powder<br />Pinch kosher or sea salt</p>
<p>For the banana and whipped cream topping:<br />1 cup heavy whipping cream<br />5 tablespoons confectioners’ sugar divided<br />1/2 teaspoon ground canela or true cinnamon<br />2 tablespoons unsalted butter<br />2 bananas peeled and sliced into thick rounds</p>
<p>INSTRUCTIONS<br />To make the poundcake:<br />Set a rack in the middle of the oven and preheat to 350°Line a 9-inch round cake pan with parchment paper, then grease the bottom and sides with butter and sprinkle with flour, shaking off any excess flour.</p>
<p>In the bowl of a mixer set with the paddle attachment, beat the butter on medium speed until soft and creamy, a couple minutes. Incorporate the sugar and cinnamon and continue beating until well mixed and fluffy, a few minutes more. Add the egg yolks and pureed chickpeas and continue beating.</p>
<p>In a small bowl, combine the flour, baking powder, and salt. Add into the mixer and continue beating until well incorporated and you have a homogenous batter.</p>
<p>In another bowl, whisk the egg whites until they hold stiff peaks, or do it in the mixer in a clean bowl using the whisk attachment. Fold the egg whites into the chickpea batter gently, until completely incorporated.</p>
<p>Pour into the prepared cake pan and bake for 30 to 35 minutes, until a toothpick inserted into the middle comes out moist but not wet. Cool for at least 10 minutes before removing from the pan. Invert from the cake pan onto a plate, then invert from the plate onto a platter so the cake is right side up.</p>
<p>To make the banana and whipped cream topping:<br />Whip the heavy whipping cream along with the 3 tablespoons confectioners’ sugar until it holds stiff peaks.</p>
<p>In a small bowl, combine the 2 remaining tablespoons confectioners’ sugar with the cinnamon.</p>
<p>Melt the butter in a large nonstick skillet over medium-high heat. Add the banana slices and cook on one side until caramelized and brown, about 2 minutes. Flip and brown on the other side. Keep warm until ready to serve.</p>
<p>Serve a slice of cake with the browned bananas and a dollop of the whipped cream. Shake the cinnamon and confectioners’ sugar mixture on top using a small sieve or fine-mesh strainer to sprinkle evenly.</p>
<p>*Note: When rinsing the chickpeas, remove as much of the outer skin as possible, as this creates a smoother puree.</p></div>

<p>INSTRUCTIONS<br />Finely chop the onion, roughly chop the garlic, finely chop the carrot (peeled) and thinly slice the celery</p>
<p>Heat a large fry pan with a medium heat and add in the olive oil</p>
<p>After a couple of minutes add in the chopped vegetables, mix with the olive oil, once the vegetables are lightly sauteed, about 4 minutes, add in the saffron and season with sea salt &amp; black pepper, mix together, then add in the canned chickpeas (drained &amp; rinsed) and the vegetable broth, raise to a high heat and mix</p>
<p>Meanwhile, add the rice into a fine sieve and rinse under cold water until the water runs clear underneath, about 1 minute</p>
<p>Once the broth comes to a boil add in the rice, give it a mix so everything is well distributed, then place a lid on the pan and lower to a low-medium heat, simmer for 15 minutes or until all the broth has been absorbed, then remove from the heat and let it sit with the lid on</p>
<p>Meanwhile, drain the cans of tuna into a fine sieve with a bowl underneath, gently flake the tuna</p>
<p>After a couple of minutes remove the lid from the pan, add the drained tuna and the chopped parsley, gently flake the rice</p>
<p>Transfer into serving dishes and serve at once</p></div>

<p>Serves 4</p>

<p>INGREDIENTS<br />7 ounces dried chickpeas (or a 14 ounce can of cooked chickpeas), plus liquid from cooking<br />1 fresh bay leaf<br />1 whole garlic clove<br />1 sprig fresh rosemary<br />1 fresh or dried chili, chopped (optional)<br />about half a 14 ounce can of peeled, chopped tomatoes<br />7 ounces of short pasta such as ditalini, pasta mista, rombi or broken up lasagna noodles<br />Extra virgin olive oil<br />Salt and freshly ground black pepper</p>
<p>INSTRUCTIONS<br />If you’re using dried chickpeas, put them in a bowl covered with plenty of fresh cold water the night before and leave them to soak in the fridge. The next day, drain the soaked chickpeas and place them in a saucepan, cover with fresh water, add a bay leaf and simmer for a couple of hours or until the chickpeas are soft. Add salt to taste at the end. Don’t throw away the cooking liquid – this is gold and you’ll need it for the sauce. If using canned chickpeas, skip to next step.</p>
<p>In another saucepan, gently heat a smashed garlic clove, a sprig of rosemary (minus the twigs, or remove them before adding the chickpeas) and the chilli in a few tablespoons of olive oil. When the garlic begins to get fragrant and soften, perhaps even slightly colour, add the tomato and let sizzle for a few minutes.</p>
<p>Add a ladle-full of the chickpea liquid (if you’ve used canned, use the liquid in the can) and about two-thirds of the chickpeas. Puree the remaining chickpeas before adding to the saucepan to create a creamy, thick sauce. There are some who remove the lump of smashed garlic before adding the chickpea puree – but you can leave it in.</p>
<p>Add more of the chickpea liquid (or water or stock) to the sauce until it is quite watery, then add the pasta and cook until the al dente and the sauce has reduced. If you choose to use a long pasta, you may want to cook it separately in a pot of water then simply add it to the ready sauce.</p>
<p>By the time the pasta has cooked, the sauce should be creamy, not watery, but not too thick either. Like a creamy soup. Season with salt and plenty of freshly ground pepper. Ladle into shallow bowls, pour over your very best extra virgin olive oil, more freshly ground pepper and then let it sit for a moment or two before serving as it will be piping hot and it needs to cool a little to be best enjoyed. Grated Parmesan or Pecorino cheese is entirely optional. Serve this pasta dish with a spoon.</p></div>
